Dining at the Royal

The Surf Room


The Surf Room offers elegant simplicity in dining for breakfast, lunch and dinner.  Renowned for its delectable Friday night Seafood Buffet, the restaurant also features an a la carte menu of innovative and delicious local dishes.  Sunday Brunch in The Surf Room is a favorite among the malihini (newcomers), as well as kamaaina (longtime residents).  Seating for Sunday Brunch begins at 11 a.m., and the buffet remains open until 2:30 p.m.  The Surf Room offers a daily breakfast buffet from 6:30 a.m. to 11:30 a.m. except on Sundays, when service is limited until 10 a.m. (prior to the start of Sunday Brunch).  Lunch is served from 11:30 p.m. to 2 p.m. Monday through Saturday.  Dinner is served from 6 p.m. to 9:30 p.m. Saturday through Thursday, with the Friday Seafood Buffet from 5:30 p.m. to 9:30 p.m.  The restaurant overlooks the famous Waikiki Beach.

The Mai Tai Bar

Adjacent to The Surf Room, The Mai Tai Bar shares a panoramic view of Waikiki Beach and Diamond Head.  The circular bar seats 20, with additional seating provided on the terrace and under umbrella tables.  The recipe for the Mai Tai tropical drink is reputed to have been refined here.  The “Shirley Temple” cocktail was also invented here.  Starwood’s Flavors of Island Music is highlighted nightly by Hawaii’s popular musicians.  The Mai Tai Bar is open daily from 10:30 a.m. to 12:30 a.m.

 1 oz. light rum
 1 oz. dark rum
 ¼ oz. Orange Curacao
 Dash of orgeat syrup
 Dash of rock candy syrup
 Juice of ½ lime
 Orange juice

The Royal Hawaiian Beach Club

Guests are invited to relax by the pool for breakfast, a light lunch or afternoon snacks at The Royal Hawaiian Beach Club.  The Beach Club also offers soft drinks and cocktails for sunbathing guests, and is open daily from 9:30 a.m. to 4:30 p.m.

“Meet Our Chefs”


Daniel Delbrel, executive chef
Formerly a native of France, Chef Delbrel apprenticed in Cannes and Paris after graduating from culinary school.  After moving to the United States, Chef Delbrel honed his culinary talents at the Ritz-Carlton in Boston and Chicago, working with talented and innovative chefs.  Settling in Hawaii in 1988, Delbrel held positions at Le Soleil Restaurant at the Mauna Lani Bay Hotel, Bungalows on the Big Island and later at the Princeville Resort on Kauai.  Today, Chef Delbrel heads the entire culinary staff of The Sheraton Waikiki and The Royal Hawaiian.  Chef Delbrel complements the unique flavors of Hawaii with classic French and European culinary technique.  Delbrel has appeared on various national television segments including In Food Today and Food Network’s Cooking Across America.

Alfred Cabacungan, executive sous chef
Chef Cabacungan works at the hotel’s Surf Room restaurant and manages all banquet functions at The Royal Hawaiian, room service and The Beach Club Café.  Previously employed at the Halekulani Hotel, the Westin Resort Macau, and the former Kahala Hilton, Cabacungan is a member of several professional culinary organizations including the Chaine de Rotisseurs, the American Culinary Federation, Chef de Cuisine Association, and the United States Army Culinary Training Team. 

Quirino Domingo, pastry chef
Elegant wedding cakes, French pastries and delicate desserts are the hallmark of pastry chef Quirino Domingo at The Royal Hawaiian.  His most popular cakes at the hotel are made from local flavors of guava, mango and haupia.
